I guess the last thing a vegan would eat in Florence is a trippa sandwich … The sandwich of the working class is the lampredotto — the Florentine fast-food par excellence. The panino di trippa o lampredotto consists of flour sèmelle local bread roll, stuffed with boiled and sliced beef entrails, rolled and seasoned with spicy sauce. This speciality is served in the trippai (little stands in the street which only serve guts). It is quite cheap and generous in size, prepared to kill hunger on the spot but providing a bunch of calories and cholesterol, as the sandwich is dripping grease.

Born of need in poor environments centuries ago, it became the favourite dish of the hungry navigators and merchants by the river Arno. Among the most select Florentine trippai or trippa stalls, basically located in street food trucks, are L’Antico Trippaio (Piazza dei Cimatori), Trippaio del Porcellino (Piazza del Mercato Nuovo), Da’Vinattieri (Via Santa Margherita, 4r), Lupen e Margo (Via dell’Ariento, 24, in the Central Street Market), Sergio Pollini Lampredotto (Via dei Macci, 126) and Ditta Eredi Nigro (Borgo San Frediano, 72). A panino di trippa costs around 5 to 7 euros.


Dónde comer lampredotto: la fast-food prototípica de Florencia

Supongo que lo último que se comería un vegano en Florencia es un panino de trippa… El panino de la clase trabajadora o la fast-food florentina por excelencia es el lampredotto. El panino di trippa o lampredotto consiste en un pan redondo florentino denominado sèmelle, relleno de tripas de ternera troceadas, hervidas, laminadas y especiadas, servidos con salsa picante en un trippaio (puesto de tripas). Se trata de una comida local (semi)barata pero abundante, destinada a matar el hambre en el acto. Una bomba de calorías y colesterol, supongo, pues es extremadamente grasienta y chorreante.

Nacido por pura necesidad en ambientes desfavorecidos hace siglos, llegó a convertirse en el plato favorito de los navegantes y comerciantes hambrientos del río Arno. Entre los puestos de trippa o trippai florentinos más selectos, en su mayoría food trucks callejeros, se encuentran L’Antico Trippaio (Piazza dei Cimatori), Trippaio del Porcellino (Piazza del Mercato Nuovo), Da’Vinattieri (Via Santa Margherita, 4r), Lupen e Margo (Via dell’Ariento, 24, en pleno Mercato Centrale callejero), Sergio Pollini Lampredotto (Via dei Macci, 126) y Ditta Eredi Nigro (Borgo San Frediano, 72).
